Carrot Bars Recipe

2 1/2 cups flour
2 cups sugar
1 1/2 tsp. ground cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 cups cooking oil
4 slightly beaten eggs
3 (4 oz.) jars strained carrots (baby food)
1 cup chopped nuts
1/2 cup butter, softened (Mom used 1/2 butter and 1/2 shortening)
1 (3 oz.) package cream cheese, softened
1 tsp. vanilla
3 cups sifted powdered sugar
greased 15x10 baking pan

Combine flour, sugar, cinnamon, baking powder, baking soda, salt. Add oil, eggs and carrots. Beat with electric mixer until combined. Stir in nuts. Pour in prepared pan. Bake at 350 for 30 minutes. Cool in pan. Beat butter, cream cheese and vanilla until light and fluffy. Gradually add two cups powdered sugar. Beat well. Beat in remaining powdered sugar. Frost. Store in refrigerator.
