2 1/2 c. flour
2 tbsp. unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 tbsp. red food coloring
1 c. buttermilk
1 c. unsalted butter, softened
1 1/2 c. sugar
3 large eggs
1 tsp. vanilla
1 tbsp. white vinegar

Frosting
8 oz. cream cheese
1/2 c. butter (1 stick)
1 box 10x sugar
1 tsp. vanilla

Grease and flour 2 9" cake pans (or spray with Bakers Joy). Sift together flour, cocoa, baking soda, and salt. Set aside. Combine buttermilk and food coloring. Set aside. In a mixing bowl, cream together butter and sugar. Add eggs, one at a time, and beat until combined. Alternately, add some of the flour mixture, then some of the buttermilk mixture, until all is incorporated. Add vanilla and vinegar, and beat until a the red color is achieved.
Bake for 30 minutes at 350º. Cool before turning out onto racks to cool completely.
Frosting: Combine all ingredients except milk. Beat until creamy. Add drops of milk if needed to make batter spreadable. Do not over due milk. Should be a creamy consistency. Spread over cake.
