2 c.flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
2 t. cinnamon
2 c. sugar
1 c. salad oil
2 c. pumpkin (1 lb. 2 oz. size can)
4 eggs

8 oz. cream cheese, softened
1 stick butter, softened
1 t. vanilla
1 T. milk
2 c. powdered sugar

Mix well salad oil, pumpkin, eggs; then add dry ingredients and blend well. Place on greased and floured cookie sheet. Bake 350 for 15 - 20 minutes until pick comes out clean. Cool; then ice with above ingredients.

This is very good and can be cut into pumpkin bars. Once, when I worked at the hospital, I made it into a 2-layer cake for a baking contest and won a blue ribbon. That's the only time I used the recipe for a layer cake. The cookie sheet method is so easy and tastes just as good.
