1 cup sugar,
1 cup flour,
1/2 cup dark powdered Hershey’s cocoa,
1/2 tsp. salt,
4 tbsp. butter,
1 cup boiling water,
1 tsp. baking soda,
1 egg,
1 tsp. vanilla.

Preheat oven to 350 degrees.
Grease 8 x 8 inch square pan.
Sift together sugar, flour, cocoa and salt in a bowl. Make a well in the center of the flour mixture and add butter to well. Add baking soda to boiling water and pour over butter in well. Beat well. Add egg and vanilla and mix well again.
Pour inro a greased 8” square pan and bake 30-40 minutes or until toothpick inserted in center comes out clean.

To bake an 8” x 12” cake double the recipe (I usually make this one). The doubled recipe may also be baked in a bundt pan or 2 round 8 inch layer cake pans.

Frost with vanilla, chocolate, or sour cream frosting. The bundt cake can be drizzled with thinned frosting. The layer cake can be filled with raspberry jam or canned cherry pie filling.
