2 sticks butter
2 onions chopped
2 bell peppers chopped
3 stalks celery chopped
3 lbs. peeled crawfish tails or shrimp
3 cloves garlic, minced
1 tbs. chopped parsley
1/2 c. flour
1 pint Half & Half
1 lb. Velveeta, cubed
24 oz. Fettuccine
chicken broth
1/4 c. chopped jalapeņos (optional)

Melt butter and saute onions, peppers & celery until tender. Add crawfish, simmer 10 min., stirring occasionally. Add garlic, parsley, flour and cream -- mix well. Simmer on low heat 30 min., stirring occasionally. Add cheese and stir until melted.

Meanwhile cook noodles in chicken broth and Creole seasoning, drain and combine with sauce. Pour into 2 - 3 qt. casseroles. Bake uncovered @ 300 degrees 20 minutes or until heated. Freezes well.
