Cooked White Rice Recipe

2 cups Uncle bens converted long grain rice
1 onion cut in quarters and or green pepper
to 1 tsp salt
1 -2 Chicken boullion cubes
4 cups HOT water
2-3 tbs cooking oil

Put water on heat to high
Put oil in pot, enough to cover bottom. Heat to medium high
Add onion and or green pepper and cook stirring until onions start to clarify. (maybe 3-5 minutes)
Add 2 cups rice. Stir and brown a little (maybe 2 minutes)
Add 4 cups hot water with 1-2 chicken boullion cubes and stir good.
Turn heat down to just small boil. Let boil slowly until the water gets down to the level of the rice.
Cover rice and turn heat down to low-2
Let cook for 12-15 minutes and do not uncover during this time.
Turn heat off and let stand 5 minutes (still covered) then ready to serve. Should not be wet or sticky.
(I like to remove the onions and peppers before serving and eat separately because some people don't like them so make sure and leave them in large chunks.)
