3/4 cup sugar
3/4 cup margarine
1 egg
1 cup cooked, mashed carrots
1 orange
2 cups sifted flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. orange extract
1 tsp. grated orange rind

1 3/4 cups powdered sugar
2 Tbsp. margarine and enough orange juice to spread well. Add grated orange rind to taste.

Preheat oven to 325

Cook carrots, cool and mash fine. Grate orange and reserve juice. Cream margarine and sugar. Add egg, carrots, extract and orange juice & rind.

Add dry ingredients.

Drop by teaspoon onto a greased cookie sheet and bake 12-15 minutes.

Cool on a wire rack and & ice when cookies have nearly cooled but are still warm enough to help the icing spread more easily.

These cookies were Cassie's absolute favorite growing up. Every trip to Pueblo, Grandmother Dupps would have and entire batch waiting and they would be gone well before the weekend visit was over!
