2 lb sliced carrots(fresh or frozen)
2 chicken bouillon cubes
8 oz Velveeta Cheese, cubed
2 tbsp butter
8 oz cream cheese, cubed
4 green onions. sliced
salt and pepper to taste

Place one inch of water in saucepan with bouillon and carrots.
Bring to a boil, reduce heat, cover and simmer for 7-9 minutes or until tender.
In another pan, combine cheese and butter. Cook over low heat until melted.
Add cream cheese, onions, salt and pepper.
Cook until cream cheese is melted.
Drain carrots and stir into cheese mixture.
Transfer to a shallow 2 quart baking dish.
Cover and bake in 350 oven for 20-25 minutes
