2/3 c. olive oil
1/3 c. wine vinegar
2 cloves garlic, slivered
1/2 tsp. salt
1/4 tsp. pepper
1 T. Dijon mustard
2 T. fresh basil, chopped
2 balls fresh mozzarella in water
3 tomatoes
Salt and pepper, to taste
Fresh sweet basil

In a small bowl, combine oil, vinegar, garlic, 1/2 tsp. salt, 1/4 tsp. pepper, mustard and chopped basil to make vinaigrette. Whisk until well combined. Place in refrigerator. Slice mozzarella and tomatoes into medium slices. On a platter, alternately place cheese, then tomatoes. Sprinkle with vinaigrette, salt and pepper. Garnish with basil.
