1 pkg Simply Potatoes Southwest Style Hash Browns
12-16 oz. bulk pork sausage or lean ground beef
1/2 c. chopped green pepper
2 c. shredded Jack/Cheddar blend
4 eggs
1 c. milk
1 medium tomato, chopped

Directions:
Directions:
Heat oven to 350º. Spray 8-inch square baking dish with cooking spray. In large skillet, cook sausage or beef and bell pepper until browned. Drain. In baking dish, layer half of potatoes, half of sausage or beef and 3/4 c. of the cheese; repeat. Combine eggs and milk in medium bowl; beat well. Pour evenly over mixture; press lightly. Cover with foil and bake 45 min. Uncover and add tomato and remaining 1/2 c. cheese. Bake, uncovered, for an additional 10-15 min. or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
