1 cup cooked mashed Sweet Potatoes
1 cups all-purpose flour
2 tsp baking powder
tsp. Salt
1 cup sugar
2/3 tsp. Cinnamon
2 large eggs
cup vegetable oil
cup chopped walnuts (or pecans)
cup dried cranberries (or raisins)

Preheat oven to 350 degrees. In large bowl, combine Sweet potatoes, flour, sugar, cinnamon and salt. Add eggs and oil. Blend well. Stir in nuts and dried cranberries.

Pour batter into greased muffin cups until full. Bake for 15 minutes, or until tops are springy.

For mini-muffins, fill muffin cups to almost full. Bake for 10-12 minutes at 350 degrees.

Remove from pan and serve warm.
Makes about 1 dozen muffins, or about 4 dozen mini-muffins.
