1 (4-8 pound) pork roast
3 cloves garlic per pound of roast, sliced
2 green bell peppers, sliced
1 red pepper, sliced
2-3 yellow onions, sliced
1/2 cup water
Garlic salt
Salt and Pepper
2 cups of your favorite salsa

Directions:
Directions:
Preheat oven to 300º. Trim any excess fat from roast and poke holes into meat to insert garlic clove slices. Lay sliced peppers and onions in the bottom of the pan. Place roast on top. Add water, garlic salt, salt and pepper. Use liberally! Top with your favorite salsa. Seal tightly and cook for 4 to 5 hours until falling apart (around 50 minutes per pound). Drain off liquid and shred. Mix with cooked peppers and onions. Serve with hot tortillas and all the trimmings you like.
