10 medium carrots
2 T. sugar
2 tsp. cornstarch
1/2 tsp. salt
1/2 tsp. ground ginger
1/2 c. orange juice
4 T. butter

Directions:
Directions:
Cook carrots covered in boiling salted water (1/2 tsp. salt to 1 cup water) until just tender, about 20 min. Drain.
Meanwhile, combine sugar, cornstarch, salt, and ginger in a small saucepan. Add orange juice; cook, stirring constantly until mixture thickens and bubbles. Boil 1 minute. Stir in butter. Pour over hot carrots and toss to coat with orange sauce.
