8 eggs, well beaten
4 cups sugar
1 cup butter
3/8 cup grated lemon rind (or 3 tsp dried lemon rind)
juice of 6 lemons (8 oz)

Directions:
Directions:
Combine eggs and sugar in double boiler. Add butter and rind and lemon juice. Cook over gently boiling water, stirring continually until mixture thickens. Bottle and cool.
