1 can shoepeg corn, drained
1 can blackeyed peas, drained
3 large tomatoes skinned seeded and chopped
3 avocados, chopped
3 T diced green onions

1 packet Good Seasons Italian Dressing, mixed w/
1/4 cup vinegar
2 T oil
3 T water

Directions:
Directions:
Mix Italian dressing, vinegar, oil and water. (Can substitute lime juice for water.) Add green onion, shoepeg (white) corn and black eyed peas. Let marinate. Just before serving add avocados and tomatoes.
