2 heads Bibb lettuce, separated into leaves, washed and dried.

2 tsp. peanut oil,
8 garlic cloves, minced,
1/2 lb. ground chicken breast,
1/2 lb. salad shrimp, diced small,
2 or more jalapeņo peppers, minced,
1 bunch green onions, minced,
2 Tbl. brown sugar,
2 Tbl. Thai fish sauce,
1 Tbl. minced ginger (I omit this),
juice of one lime,
1/2 cup cilantro, chopped,
salt to taste,
2 Tbl. chopped dry-roasted peanuts
(Cayenne pepper or chili pepper optional).

In a large skillet, heat the oil. Add the garlic and fry until lightly browned. Add the chicken and shrimp and saute until the shrimp turns pink. Add the jalapeņo peppers, green onions, brown sugar and fish sauce. Stir well, on high heat, for one minute. Add the ginger and live juice, cook for 1 minute longer, then add the cilantro and season to taste with salt. Toss in the peanuts and serve with lettuce leaves as wrappers.
