2 bags Spinach
1 bag Romaine Lettuce
8 oz cottage cheese
1 cup shredded Swiss cheese
1 jar bacon bits
optional: grape tomatoes

1/2 cup olive oil
1/2 cup cider vinegar
1/2 cup chopped red onion
1/4 cup sugar or Splenda
1 tsp poppy seeds
1/2 tsp dried minced onion
1/2 tsp ground mustard
1/8 tsp salt

Mix all the dressing ingredients together in a small bowl until well blended. Toss the spinach, lettuce, cheeses, and bacon bits together in a large bowl. Slowly add dressing, tossing as you go.
