Thai Noodle Salad Recipe

Chinese rice vermicelli or the finest pasta noodles you can find
2 cups packed spinach
1 sweet red pepper, cut in thin strips
1 good sized carrot small strips
Thai dressing
1/4 cup unsalted peanuts (I use 1/2 natural peanut butter and 1/2
3 Tbsp minced gingerroot
1/4 cup lime juice
1/4 cup water
2 Tbsp soy sauce
1 Tbsp granulated sugar
1 tsp sesame oil
1/4 hot pepper flakes or I use chili paste

Cook noodles following directions on package. While noodles are cooking
mix all other ingredients together in food processor. Taste, add more
spice if needed or peanuts or peanut butter.

If you are making a larger salad just double the recipe. I like to toss
the noodles with a bit or the dressing and then toss the veggies with
the rest of the dressing. When this in done arrange the noodles on a
nice plate and lay the veggies over top of the noodles. Enjoy!!!!!
