1/4 c. warm water
1 T. yeast
4 1/4 c. sifted flour
1 t. salt
1 t. sugar
1 1/4 c. lukewarm water
2 T. olive oil

Pour warm water into a warm large bowl, sprinkle in the yeast and stir to dissolve. Mix in 1/2 c. flour, salt and sugar. Add water oil and beat until smooth. Mix in remaining flour and knead on lightly floured board until elastic. Shape into ball and turn in greased bowl to coat all over. Let rise 1 hour.

Pizza Sauce
1 (8 oz) can tomato sauce
1 (6 oz) can tomato paste
1 T. olive oil
2 T. water
1 clove garlic
1 t. oregano
1/2 sugar
1/8 t. crushed dried hot chili peppers

Warm all ingredients in saucepan over low heat, stirring occasionally 20 minutes, keep warm.
Preheat oven to 450 degrees.

Topping 3/4 lbs. mozzarella cheese
1/3 - 1/2 c. Parmesan cheese
1 t. oregano

Bake 20-25 minutes.
