1 package boneless chicken breast, cooked
1 bunch cilantro
1 medium onion
1 cup Sierra Nevada Chileno Pepper (hot), chopped
lb Cheddar Cheese, grated
1 can refried beans with jalapenos, heated
1 can green chile enchilada sauce
black olive slices

Cut up the chicken into bite size pieces, set aside.
Chop cilantro and onion, place in a skillet with butter and chile pepper juice, add chicken.
Cook over medium heat for a few minutes, set aside.
Assemble tortillas: add beans, chicken mixture, pinch of cheese. Roll tortilla, place fold side down in a 911 glass baking dish.
Pour green sauce all over enchiladas, top with remaining cheese and black olives cover lightly with foil and place in a preheated 350 degree oven for 20 minutes.
