1 1/2 c. flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1 egg
1 c. sugar
1 1/2 c. peeled, finely shredded apple
1/4 c. cooking oil
1/2 c. toasted, chopped pecans or walnuts (optional)

Preheat oven to 350
In medium bowl combine flour, cinnamon, baking soda, salt, and baking powder.
In separate bowl combine egg, sugar, apple, and oil. Add apple mixture all at once to flour mixture and mix just until moistened. Fold in nuts and spoon batter into greased loaf pan.
Bake at 350 for 50-55 minutes or until inserted toothpick comes out clean.
