6 c oats
1 quart buttermilk
another cup of something healthy to add moisture (such as a few mashed bananas, applesauce, yogurt, canned crushed pineapple, etc)
1/3-1/2 c molassas
1/2-1 c brown sugar
1 tsp allspice
1 tsp cinnamon
1 c dried cranberries
1 c dried other fruit (cherries, raisins, pineapple...)
1 c chopped walnuts or other nut, if desired
1 c wheat germ
1 c wheat bran
1/2 c white flour
1/2 c wheat flour
1 1/2 tsp baking soda
1 1/2 tsp backing powder

Mix oats, buttermilk, molassas, sugar, dried frut & nuts and whatever else you'd like to add a little more moisture and let sit for 20 min. Mix dry ingredients together (can substitute flax for part / all of wheat bran or germ). Add dry ingredients to wet.

Spray the insides of muffin cup papers with nonstick spray so they don't stick to the muffins when they're cooked. Fill each cup fairly full (they don't rise much).

Bake at ~375 x20 min and then cool completely. Store what you won't eat within a couple of days in the freezer in plastic bags and take out to eat as needed. Microwave frozen muffin for 20-30 seconds before eating.
