The Rub-
1/4 cup Brown Sugar
2 tbs Fresh ginger grated
2 tsp Salt
2 tsp lime peel finely shredded
1 tsp Cumin
1/2 tsp Cinnamon
4 pounds Pork Baby back ribs Cut into 6-8 rib portions

MOP Sauce-
1/2 cup Chicken Broth
1/4  cup Dark Rum
3 tbs lime juice
1 tbs Olive Oil
1 fresh Habanero Chili finely chopped

Mango-Guava BBQ Sauce-
1 2/3 cup Mango chopped
2/3 cup brown Sugar
2/3 cup Onion chopped
1/3 cup Lime Juice
1/4 cup Olive Oil
1/4 cup Guava paste
3 tbs Honey
2 tbs Tomato Paste
2 Coves Garlic Minced
3/4 tsp Cumin

1.  In small bow, combine brown sugar, ginger, salt, lime peel, cumin, and cinnamon. Sprinkle mixture evenly over ribs and rub in with fingers. Place in large  ziplock bag, seal, and marinate in refrigerator for 8- 24 hours.

2. MOP Sauce: combine broth, rum , lime juice, oil and habanero. Cover and chill for 8-24 hours.

3. Just before baking, pour MOP sauce into ziplock bag and coat ribs. double wrap ribs in aluminum foil with remaining sauce, place in large shallow roasting pan, and bake in a 325º F. oven for 2 hours.

4. In saucepan, combine all ingredients for BBQ Sauce and bring  to boil. reduce heat, cover and simmer for 15 minutes. Cool slightly. Transfer to blender and blend until slightly chunky.

5. Preheat gas grill on high, Unwrap aluminum foil, place ribs, bone side down on hot grill. Drain liquid from aluminum foil into roasting pan into BBQ Sauce and baste ribs with this mixture. Grill on high to add good color on ribs. about 3-4 minutes on each side. turning once and basting multiple times.
