Cinnamon Rolls Recipe

1 tbsp. yeast
1 1/2 c. warm water
1 c. mashed potatoes
2/3 c. sugar
1/2 c. butter (1 cube)
2 eggs
1 tsp. salt
6-7 c. flour

Peel and boil potatoes. Drain. Mash and set aside.

Into the warm water (105-115 degrees), mix about 1 tbsp. of sugar. Sprinkle in yeast while stirring gently.

Place all remaining ingredients, EXCEPT flour, in a mixing bowl. Add water and yeast. Mix with a flat paddle.Sprinkle in flour while mixing. Continue until well blended.

Change to dough hook and knead on medium low speed for 5 minutes.

Pour dough out on to a floured pastry cloth and knead by hand until smooth ball forms.

Coat with a little oil and place in a large bowl. Cover lightly and place in a warm place to rise, until doubled in size. (Test by poking. Dent should remain.)

Knead a few times. Divide dough into manageable lumps (3?). Roll out on a floured cloth into a rectangle (6 inches on the short direction). Spread with softened butter. Sprinkle heavily with filling (see other recipe). Roll up into a long log. (This is where you can deviate if you want to make the caramel/pecan variety.) Cut into one inch slices and place them spaced loosely into greased baking pans. Cover lightly and allow to rise again.

Bake at 375 degrees for about 25 minutes (until browned).
