Ingredients: 3 c. flour 1 1/2 tsp. cinnamon 1 tsp. cloves 1 tsp. nutmeg 1 1/2 c. sugar 1/2 tsp. black pepper* 1 1/2 c. raisins 1 c. chopped nuts

1 c. melted shortening

3 tsp. baking soda 2 1/4 c. applesauce

Directions: |
Directions: Mix dry ingredients. Stir in melted shortening (hand or mixer). Heat applesauce, then add soda (which will cause it to fizz up). Stir into other ingredients. Pour into greased angel food cake pan. Bake at 350? for 50 minutes or so. (It’s definitely “or so”. Make that 55-65 minutes until toothpick tests clean.) Cool 10 min. or so before removing from pan. |

Notes: Mom said this was a war cake (World War II) because it had no eggs. I wonder about that since it has sugar and raisins and nuts in it which probably were rationed. It is a dense fruitcake and my choice for a birthday cake. A late addition is the pepper*. It really perks it up! And I often add an egg or too because it makes it less dense. But my daughter Rachel likes it as written for her birthday cake.
