Yummy Carrot Cake Recipe

2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
4 beaten eggs
2 c. grated carrot
1/2 c. chopped walnuts (optional)
1 c. coconut
1 c. vegetable oil
2 tsp. vanilla
1 c. crushed pineapple, undrained

2 c. powdered sugar
1/4 c. butter
4 oz cream cheese
1 tsp. vanilla

Mix all ingredients together and pour into a greased 9x13 pan and bake uncovered at 350 for 1 hour or until cooked in the middle. Let cool. Beat frosting ingredients together and spread on top of cake. Can 1 1/2 the frosting recipe if you like it thicker.
