1 cup sugar
1/2 cup shortening
1 egg
1 cup persimmon pulp
1 cup raisins
1 cup chopped walnuts
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon

Directions:
Directions:
Preheat oven to 325º. Mix together sugar, shortening, egg, persimmon pulp, raisins and walnuts. Sift together flour, baking soda, baking powder, salt and cinnamon. Mix all ingredients together. Drop by teaspoonful onto ungreased cookie sheet. Bake 10 - 12 minutes.

Sometimes it takes a very long time for the persimmon to soften. The fastest way is to put the whole persimmon in the freezer until they freeze solid. When ready to use, remove from the freezer, run under hot water to skin. The pulp will be soft and perfect for use. This was advice given to me by a friend that grows persimmons.
