12 eggs,
1 can (12oz.) evaporated milk,
1 tsp. salt,
1/2 tsp. pepper,
1/8 tsp, cayenne pepper (optional),
1 Pkg. (30oz) frozen shredded hash browns,
2 cups (8oz) shredded Cheddar cheese,
1 large onion, chopped,
1 medium green pepper, chopped,
1 cup cubed fully cooked ham

In large bowl, combine the eggs, milk, salt, pepper and cayenne pepper. Stir in potatoes, cheese, onion, green pepper and ham. Pour into a greased 13-in. x 9-in. x 2in. baking dish.

Bake uncovered at 350 for 45-50 minute's or until a knife inserted near the center comes out clean.
