1/2 c. minced onion
4 tbsp. butter
4 tbsp. flour
1 1/2 tsp. cornstarch
4 c. chicken broth
4 c. milk
1 c. cooked diced carrots
1 c. cooked diced celery
1 c. cooked diced potatoes
1/2 tsp. baking soda
1 lb. Velveeta cheese

Saute onions in butter in a large saucepan. Add flour and cornstarch and stir until smooth. Add chicken broth alternately with milk. Cook until thickened, stirring constantly over medium heat. Add vegetables, soda and cheese and stir until cheese is melted.
