2 cans Northern beans
3 cans chicken broth
2-3 c. water
1 med. chopped onion
1-2 stalks celery, sliced
Garlic powder
2 c. cooked, diced chicken (once again, I usually use rotisserie chicken from Costco!)
1/4 c. chopped fresh parsley
1 t. cumin
3/4 t. oregano
1/8. t. cayenne
1/8 t. ground cloves
3/4 c. Monterey Jack cheese, shredded (for serving)
Cilantro, chopped (for serving)

Empty beans into soup pot. Add broth and next 4 ingredients. Bring to a boil, stirring occasionally. Reduce heat and simmer until onion is soft. Add chicken and next 5 ingredients. Cook for 30 minutes. Taste; add salt if necessary. Serve with cheese and cilantro, if desired.
