Corn Chowder Recipe

1 tbls butter
1 small yellow onion
1 pkg (10 oz) frozen corn
1 large potato (peeled, cubed and par boiled)
1/2 small green pepper(or red or mixed)
pinch hot pepper flakes
1/2 cup of half & half
1 cup chicken broth
1/4 tsp salt
1/8 tsp pepper
2 sprigs fresh parsley(chopped)

Parboil potato and cube.
Melt butter in medium saucepan. Add onion and pepper and saute till soft.
Then add remainder of ingredients except parsley.
Simmer till potato and veggies are cooked through.
Top with parsley.
Don't boil, nice slow simmer.

Although this recipe doesn't call for this; if I have 4 slices of bacon, I usually cook till crisp,saute onion and pepper in 1 tbls of bacon grease and continue recipe. I like the bacon then crumbled and put on top.
