1 boneless beef chuck roast (3–4 lbs)
1 med onion, chopped
1/2 c. chopped celery
Water
1 1/2 c. ketchup
1/4 c. packed brown sugar
1/4 c. vinegar
2 T. dry mustard
2 t. salt
2 t. Worcestershire sauce
1 t. chili powder
1/2 t. paprika
1/2 t. garlic salt

Directions:
Directions:
Place onion, celery, and beef in crockpot; add about an inch of water. Turn crockpot on low 8-10 hours. (This is a two-day process!). Refrigerate overnight. In the morning, skim fat off and some liquid and turn on low again. After 6-8 hours, it should be very tender and shred easily. Mix remaining ingredients and add to crockpot. (If it seems like it will be too juicy, remove some liquid first). Cover and cook on low another hour. Serve on buns/rolls.
