1/2 lb. butter
1 lb. onions, finely chopped (about 3 onions)
1 C. flour
1 Qt. half & half
4 lbs. baked potatoes, peeled and diced (about 8-10 potatoes)
1 tsp. salt
1 tsp. basil
1/2 tsp. black pepper
1/2 tsp. Tabasco sauce
1/2 gallon chicken stock
(I use the S&W brand, fat free)

Saute onions in butter. Add flour and chicken stock, stir with wire whisk. Cook slowly until thick. Add half & half, seasonings and potatoes.
Serve with grated cheese, bacon and green onions.
