5 T. butter
1/4 c. flour
2 1/2 c. milk
1 T. mustard
1 1/2 c. Cheddar cheese
pepper to taste
1 c. shredded mozzarella cheese
1 lb. macaroni shells or elbows
1/2 c. homemade style bread crumbs
2 T. butter
1/2 c. Parmesan cheese, grated
1 t. paprika

Melt butter in medium saucepan over medium heat. Stir in flour until smooth. Stir in milk. Cook constantly until thickened. Stir in mustard, Cheddar and pepper. Cook, stirring constantly until cheese is melted. Remove from heat. Cook pasta al dente (not quite done). Drain and rinse throughly with hot water. Return cheese sauce to heat; stir in mozzarella and cook until melted. Combine cheese sauce and cooked pasta; spoon into buttered 2-quart baking dish. Melt butter in small skillet; stir bread crumbs in melted butter and cook lightly to toast. Remove from heat and stir in Parmesan cheese and paprika. Sprinkle bread crumbs over pasta. Bake at 350 for 15 minutes until bubbly.
