6 - 1 lb. pork chops or smaller 1/2 lb. portions

MARINADE:
2 c. soy sauce
1 c. water
1/2 c. brown sugar
1 T. dark molasses
1 tsp. salt

SAUCE:
1/3 c. water
1 - 14 oz. Heinz ketchup
1 - 12 oz. Heinz chili sauce
1/2 c. brown sugar
1 T. dry mustard

To Make Marinade: In a saucepan, combine soy sauce, water, brown sugar, molasses and salt. Bring to a boil. Place chops and sauce in ziploc bag and marinate in the refrigerator over night.

To Assemble Next Day: Discard the marinade, and place chops in greased baking dish. Cover tightly with foil. Preheat oven to 375º and bake until tender (for 1 lb chop, about 2 hours, for thinner, less time) At this point, the chops can be set aside in the refrigerator or frozen.

To Make Sauce: Whisk dry mustard with water until lumps disappear. Stir in ketchup, chili sauce and brown sugar. Transfer mixture to small saucepan and bring to a light boil until sugar has dissolved. Grease a large baking pan. Spread half the sauce in the bottom of the pan, then layer the chops on top. Spread remaining sauce across the top of the chops, to cover.

Preheat the oven to 350º and bake for 30 minutes or until bubbling. Cooking may also be done on the grill. Dip chops into the sauce and baste while cooking. Sauce burns easily.
