Zucchini Bread Recipe

3 eggs
1 c. oil
1 tsp. cinnamon
1 c. chopped nuts
2 tsp. salt
2 tsp. baking soda
2 c. sugar
1 tsp. vanilla
2 c. flour
2 c. zucchini, grated and drained
1/4 tsp. baking powder

Beat eggs until frothy, then add sugar, oil, and vanilla, beating just until mixture turns lemon-colored. Stir in zucchini, flour, cinnamon, baking soda, salt, and baking powder. Add nuts. Pour into greased and floured pans and bake at 350 for 1 hour.
Yield: 3 small loaves or 1 large and 1 small.
