Coconut Pie Recipe

1 pie crust

2 cups milk
2 egg yolks
1/2 cup sugar
1/2 to 1 cup coconut
1 tsp vanilla
2 Tbsp corn starch

2 tsp cold water
2 egg whites
2 Tbsp sugar
1/2 tsp vanilla

Cook all filling ingredients in a double boiler until creamy thick. Pour into pie crust. For Meringue: Beat water and egg whites until stiff. Add sugar and vanilla. Spoon onto top of pie. Sprinkle lightly with coconut.

MaMa started with a fresh coconut, breaking, peeling, and grinding it. She also make her pie crust, but I don't have that recipe.
