6 baking apples
1/2 c. water
2 c. sugar
1/4 tsp. mace
3 whole allspice
1/2 T. nutmeg
1 tsp. ginger
3 cloves
1 stick cinnamon
6 eggs
2 bottles Madeira Wine
1/2 c. brandy

Preheat oven 350.

Core and quarter apples. Place in baking pan bake with 1/2 inch of water and bake until done (soft) - about 30 minutes.

In the meantime, place 1/2 c. water, sugar and all spices in a medium saucepan and bring to boil for 5 minutes. Stir occasionally.

Separate the eggs and beat the whites until soft peaks form. Beat the egg yolks until they are shiny, and then fold the two together. Remove the whole allspice and cinnamon stick from the syrup mixture, then slowly pour it into the whipped eggs.
In a second saucepan, heat the Madeira wine with Brandy until steamy. Slowly add the egg/syrup mixture into the wine, stirring constantly. Add the hot apples slices and serve in mugs.
