Prepare Chicken 1 day ahead and let chill overnight in refrigerator before slicing
1.5-2 lbs Boneless Skinless Chicken
1.4c olive oil
1t garlic powder
1 T oregano
1t salt
1t pepper

Wrap Ingredients:
12 @ 10” Mission Brand “Tomato Basil” Wraps (2 pkg)
1.5 – 2 lbs Thin-sliced cooked chicken
1.5 c grated sharp cheddar cheese
1 c Newman's Ranch Dressing
1.5 c diced tomato
2 heads Hearts of Romaine Lettuce / washed & separated

Cook Chicken in advance, to chill over night in refrigerator. PREHEAT OVEN TO 400 DEG.
Pour half of olive oil in bottom of glass baking dish. Lay chicken pieces in dish, move around to coat bottom in olive, then turn pieces over. Drizzle remaining olive oil over chicken pieces. Turn chicken pieces again to coat evenly with oil. Sprinkle half of garlic powder, salt, pepper on chicken pieces then turn over. Sprinkle remaining seasonings on chicken pieces, then top with oregano – sprinkle evenly across all pieces. Cover and bake for 1 hr @ 400 deg. Remove from oven and let rest for half hour. Remove to clean dish. Cover and put in refrigerator overnight. The next day, slice chicken in very thin slices across the grain.

To assemble wraps:
Down center of wrap, position app. 3-4 oz thin-sliced chicken pieces. On top of chicken pieces: Drizzle with 1-2 T Ranch dressing; Spoon 1 T diced tomato; Sprinkle 1 oz grated cheese; Lay 1-2 whole leaves of Romaine lettuce on top. Fold left side of wrap tightly over top of ingredients; pull over right side tightly to close. Turn over on serving plate, or wrap tightly with foil wrap if putting in lunch bag. Enjoy!

All ingredients keep well in the fridge for a week or so. You can make the wraps 1 or 2 at a time as you need them. Super quick & easy; very healthy! :)
