1 cup onion, finely chopped
1 cup celery, finely chopped
2 cups diced potatoes
3-4 tsp. chicken bouillon
3/4 cup butter
3/4 cup flour
4 cups milk
1/2 tsp. sugar
pepper to taste
3-4 cups grated cheese

Place vegetables in a large pot and cover with water. Add bouillon. Simmer until potatoes are tender (about 20 min.).
In a separate pot melt butter, add flour and blend. Slowly add milk, stirring constantly. When mixture is hot, add cheese a little at a time until melted and mixture is smooth and thickened.
Add this mixture to pot of vegetables and simmer. 15-30 minutes before serving.
