Baby Portabella Napoleons Recipe

6 baby Portabella mushrooms, cleaned and de-stemmed
1 Tbls. olive oil
1 tsp. kosher salt
1 tsp. cracked black pepper
6- slices BelGioioso Fresh Mozzarella
6 Basil Leaves
1 Roma Tomato
c. Pine Nuts

Preheat grill (or grill pan) to medium high.
Brush mushrooms with olive oil and sprinkle with kosher salt and pepper.
Grill mushrooms on both sides for 2-3 minutes until tender.
Remove from grill and top with fresh mozzarella, sliced tomato, and basil.
Sprinkle tops with pine nuts and drizzle with balsamic glaze (recipe follows)

Balsamic Glaze
2 c. balsamic vinegar

Place vinegar in a saucepan and place over high heat. Reduce vinegar by half and allow to cool before using
