3/4 cup olive oil
4 tbsp fresh lemon juice
1/2 tsp sugar
1 egg
1/2 tsp Dijon mustard
2 garlic cloves (at least) finely chopped
1/2 tsp of capers (finely chopped and optional)
Worcestershire sauce to taste
salt and pepper to taste
2/3 cup fresh Parmesan cheese (to taste)
anchovy paste to taste and optional
2 heads of romaine lettuce, torn
2 cups croutons

Prepare the dressing by whisking or blending together olive oil, lemon juice, sugar. Then add egg, parmesan cheese, mustard, garlic, Worcestershire sauce, salt, pepper and anchovy paste. The dressing must be emulsified, creamy and medium thickness if mixed in this order. Chill in an air tight glass jar for several hours before serving. Shell well and pour over lettuce, croutons and cheese.
