6 medium potatoes
3/4 c. heated half and half
1&1/2 tsp salt
1/3 cup grated sharp cheddar cheese
1/4 c. butter
1 tsp. mustard
1/4 c. chopped green onions
beaten egg white

Directions:
Directions:
For six servings, cook 6 peeled medium potatoes in boiling, salted water until tender. Drain. Beat briskly with mixer or potatoe masher until smooth. Add heated half and half, salt, cheese, butter, mustard, green onions; mix well. Place in a buttered baking dish. Top with beaten egg white. Bake in moderate (375º) oven for 50 min. to 1 hour.

May be done ahead of time and refrigerated. At least one hour before dinner, top with beaten egg white and bake as directed.
