2 logs of Kraft Extra Sharp Cheese
⅓ log smoky cheese, any brand
1 onion, small or medium, chopped
1 small jar pimentos (including juice)
Enough mayonnaise to moisten

Seasonings as desired: Tabasco, onion and garlic powders, Lawry's Seasoning Salt, red and black pepper

Grate cheese in food processor. Remove to bowl and toss to mix. Using steel blade, process onion and pimento to a fine pulp. Add cheese, mayonnaise and mix. Taste and season as desired. Elva says this is the hard part. She normally uses Tabasco, onion and garlic powders, seasoning salt, black pepper and a little red pepper. Suit yourself! Serve with assorted crackers.

This is so good either hot or room temperature. If heated, it is especially appetizing on a cold night as the aroma permeates the atmosphere. It freezes well, too.

Elva Thompson, Diddy Thompson's sister-in-law, is a wonderful cook.Take her advise and just toss in any small pieces of cheese that happen to be in the frig. when making "Cheese Gobble".
