2-4 Chicken Breasts or 1 whole chicken
1/2 of a small onion, do not separate layers
4 cloves whole garlic
2 stalks celery, washed and whole
Freshly cracked Pepper

To the chicken pieces add:

3/4 cup salad dressing
1/2 tsp garlic powder
1/2 tsp onion powder
2-4 stalks of diced celery
Salt and Pepper to taste

In a large pot on high heat, bring the above ingredients to a boil. Reduce heat to medium and simmer until chicken is poached. (20 minutes or so) Remove chicken from pot to cool and cut into bite size pieces. You can strain and freeze the chicken broth for later use.
Add dressing to chicken and Mix with hands until uniform consistency occurs. You can use more dressing or some reserved broth if chicken salad is too dry.
