Banana Crumb Muffins Recipe

1 tsp. cinnamon
1/4 cup sugar
1/2 cup flour
4 T. butter (room temp.)

1 1/2 cup flour
1 tsp. baking powder
3 large bananas (mashed)
1 egg, slightly beaten
1 tsp. baking soda
1/2 tsp. salt
3/4 cup sugar
1/3 cup butter (melted)

Preheat oven to 375. In a large bowl, combine first four ingredients and set aside. In another bowl, combine remaining ingredients and mix well. Stir wet mixture into dry mixture, stirring until just moistened. Fill greased muffin cups 3/4 full. (Do not use paper muffin cups.) Using your fingers put crumbs of the topping mix over muffin batter. Bake 18 - 20 minutes, or until done. Cool in pan for 10 minutes.
