Ingredients: 4 cups of cooked tortellini, rinsed and chilled (2 packages dried) 1 pound of cherry tomatoes (quartered) or grape tomatoes (halved) 2 colored peppers, diced (red, yellow, green, or orange) 1 medium cucumber, peeled and diced 3 green onions or 1 medium red/white onion, diced 1/4 pound of mushrooms (half an 8-ounce container), diced 1 tablespoon fresh basil, chopped 2 or 3 carrots, shredded (about 1 handful or half a 10-ounce bag) 1 small can of sliced black olives (about 4 ounces) 1 teaspoon salt sprinkle of fresh black pepper 1/4 cup olive oil 3 tablespoons balsamic vinegar 2 tablespoons Parmesan cheese (shredded)

Directions:Cook tortellini according to the directions on the package. Drain pasta, rinse with cold water, and refrigerate until cold. You may want to make the pasta the night before or 2 to 3 hours before you are ready to assemble.
Dice tomatoes, peppers, cucumber, onions, mushrooms, and basil, and add to a large bowl. Add carrots, black olives, salt, and pepper to the bowl and mix well. Add olive oil and vinegar and mix well. Add half the tortellini to the bowl and mix well. Add the rest of the tortellini to the bowl and mix. Top with Parmesan cheese. |
