Sunshine Chicken Recipe

1 chicken
1 tsp. salt
1 tsp. basil
1/4 tsp. freshly ground pepper
1/2 c. soy sauce
1/2 c. ketchup
1/4 c. honey
1/4 c. corn oil
2 cloves of garlic, crushed
3/4 c. water
1 1/2 c. sugar
3 T. slivered orange peel
3 c. fresh orange sections

Sprinkle chicken with salt, basil and pepper. In a bowl mix together soy sauce, ketchup, honey, corn oil and garlic. In a large shallow baking pan, place chicken, skin side up, in a single layer. Pour about 1/2 of soy sauce mixture over chicken. Bake in 350 oven, basting frequently, about 1 hour, or until tender. Make orange sauce by combining remaining ingredients and cooking until slightly thickened. Add 3 cups fresh orange sections. Cook about 3 minutes. Mix remaining soy sauce mixture and orange sauce. Pour over chicken and serve.
