1 pound of lasagna noodles
16 ounces ricotta cheese
3 eggs
1/2 cup Parmesan or Romano cheese, grated
1 tablespoon parsley
salt and pepper to taste
1 pound mozzarella cheese (grated or chunked)
1/2 pound provolone (sliced)
Mamma's pasta sauce (see recipe)

Cook lasagna noodles according to package directions.

Mix together the ricotta cheese, eggs, Parmesan
cheese, parsley, salt, and pepper.

Put a thin layer of sauce in a large lasagna baking dish. Layer half of the cooked lasagna noodles, all of the ricotta mixture, and about half of the mozzarella. Repeat with half the remaining sauce, the rest of the noodles, one half of the remaining mozzarella and provolone, and the rest of the sauce. Add remaining mozzarella and provolone to the top to give the lasagna a nice, somewhat crusty top.

Bake in 350-degree oven until sauce is bubbly (usually 45 minutes to an hour). Let rest at least 15 minutes until set before cutting.

The unused portion freezes well. After defrosting, I usually add a small amount of sauce and extra cheese before reheating.
