1 c. onion, diced
1/2 c. green bell pepper, diced
1 tbsp. garlic, minced
1/3 c. cider vinegar
2 cans pinto beans (15 oz. each), drained and rinsed
1 c. canned crushed tomatoes
1/2 c. brown sugar
3 tbsp. worchestershire sauce
2 tbsp. prepared yellow mustard
1 tsp. Tobasco sauce
salt and pepper to taste
1 tbsp. olive oil

Preheat oven to 400. Saute the onion and bell pepper in oil in a large ovenproof saute pan or cast iron skillet over medium-high heat. Cook until vegetables are soft (about 8 minutes); add the garlic and saute 1 more minute. Deglaze with vinegar, then stir in the remaining ingredients. Bring to a simmer, then transfer to the oven and bake for 20 minutes, or until the beans are bubbly.
